Let’s start with some Rum Punch Cocktails!
The recipe in the picture is from Coastal Living magazine. I like the Coconut Rum flavor so I modify it by adding 1 and 1/2 cup Coconut Rum and 1 Cup of White Rum. It fills a 1/2 gallon pitcher, and you need to stir before serving because the pineapple juice will settle to the bottom. I serve it in a pretty glass, FULL of ice. It is a strong but tasty drink!
Another favorite of mine is a Bahama Mama:
Bahama Mama
4 cups Pineapple Juice
4 cups Orange Juice
2 cups Coconut Rum
2 cups Nassau Royale
¼ cup Grenadine Syrup
You need a gallon pitcher to mix the ingredients above, or you can cut the recipe in half and use a 1/2 gallon. This is a pretty sweet drink. Another variation I like that makes it lower calorie is to mix equal parts Crystal Light Lemonade with Bahama Mama, and you have a refreshing drink with less alcohol and less calories. You can experiment and mix whatever strength you want. The drinks in the picture above are Bahama Mamas diluted with Crystal Light Lemonade.
Here is a fun and refreshing Non-Alcoholic Drink:
Frozen Strawberry/Orange Daiquiri
This was a favorite, special, beach drink for our children when they were younger!
Place 1 can Frozen Bacardi Strawberry Daiquiri in a blender, fill the empty can with Orange Juice and add it to the blender. Fill the rest of the space in the blender with crushed ice, and blend until you have a smooth, frozen drink. Enjoy!
LIGHTER CALORIE FUN COCKTAILS – from Coastal Living – July 2017:
Skinny Colada Sparkler
Ingredients:
- 1/2 cup plus 2 Tbsp. pineapple juice
- 1/4 cup (2 oz.) light rum
- 1/4 cup coconut-flavored sparkling water (such as LaCroix)
- Ice
- Garnish: fresh pineapple
How to Make It:
Stir together pineapple juice, rum, and sparkling water in an ice-filled 16-oz. glass. Garnish, if desired.
Sparkling Lime Paloma
Ingredients:
- 1 tablespoon fresh grapefruit juice
- 2 tablespoons kosher salt
- Ice
- 1/4 cup sparkling mineral water (such as Topo Chico)
- 3 tablespoons (1 1/2 oz.) blanco tequila
- 1 tablespoon simple syrup
- 1 tablespoon fresh lime juice (from 1 lime)
- 1/2 cup grapefruit juice
- Garnish: grapefruit slice
How to Make it:
Place 1 Tbsp. grapefruit juice in a shallow bowl or saucer. Place kosher salt in a separate shallow bowl or saucer. Dip rim of an old-fashioned glass in grapefruit juice in shallow bowl, and then dip damp glass rim in salt to coat the rim. Fill glass with ice. Add sparkling mineral water, tequila, simple syrup, lime juice, and 1/2 cup grapefruit juice; stir to blend. Garnish, if desired.
